Inspired by the Pantone Color of the Year 2025, PANTONE 17-1230 Mocha Mousse, Bar Manager Jason Marshall from The Ritz-Carlton, Portland masterfully crafted the "Go Figure" zero-proof cocktail, an expert infusion for a delightful mixology experience.


We partnered with world-class Executive Chefs, Pastry Chefs, and Mixologists to use Pantone Color of the Year 2025 Mocha Mousse tea blend as their muse in creating artful infusions. Drawing inspiration from the richness of the hue, this exploration unites the world of culinary and design for a journey of the senses.

Our Mocha Mousse bespoke blend reimagines a chocolate indulgence with velvety rich cocoa, soothing micro-farmed Himalayan chamomile, aromatic cinnamon, and restorative dandelion root–crafted for moments of comfort, connection, and indulgence.

Ingredients

  • 1 ½ oz. Dromme Calm Spirited Zero Proof
  • 1 ½ oz. Dhos Orange Non-Alcoholic Liqueur
  • ½ oz. TEALEAVES Mocha Mousse and Black Mission Fig Syrup
  • ⅓ cup Vanilla Bean Gelato

  • 272 ⅓ g. Water
  • 272 ⅓ g. White Cane Sugar
  • 4 g. Lemon Juice
  • 4 g. Pantone Color of the Year 2025 Mocha Mousse black tea

Instructions

TEALEAVES Mocha Mousse & Black Mission Fig Syrup

  1. Combine water, white cane sugar, lemon juice, and Pantone Color of the Year 2025 Mocha Mousse tea into a large pot on a stove top. Bring to a boil and then let simmer until it reduces by half. Allow to cool. Refrigerate.

Go Figure

  1. Place the vanilla gelato into a handled double-walled cup. Combine the Domme Calm, Dhos Orange, and TEALEAVES Mocha Mousse black mission fig syrup into a cocktail shaker. Add ice and shake vigorously for 10 seconds. Double strain into the double-walled cup on top of the gelato. Garnish with a golden fig. Enjoy.
